We founded Pujol in 2000 in Mexico City with the intention of reinterpreting Mexico’s flavors, techniques, and ingredients through a modern lens—one that is respectful and deeply connected to the land. Located in Polanco, we work closely with local and seasonal producers, with corn at the heart of our cuisine.
